  • 3 cups baby potatoes, halved Tender and flavorful; no peeling needed.
  • 2 cups broccoli florets Adds beautiful color and crunch.
  • 2 cups carrots, sliced thick Sweet and hearty, roast perfectly.

Seasoning and Oil

  • 3 tablespoons olive oil Helps everything roast beautifully.
  • 1 teaspoon garlic powder Enhances the taste.
  • 1 teaspoon smoked paprika Adds smokiness.
  • 1/2 teaspoon dried thyme Brings heartwarming taste.
  • 1/2 teaspoon dried oregano Brings heartwarming taste.
  • to taste salt and pepper Essential for enhancing flavors.

Garnish

  • 1 tablespoon fresh parsley, chopped Optional, for garnish.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper.
  • In a mixing bowl, toss together halved baby potatoes, broccoli florets, and thickly sliced carrots with olive oil, garlic powder, smoked paprika, thyme, oregano, salt, and pepper.
  • Scatter the sausage pieces over the top of the vegetables on the baking sheet.

Cooking

  • Roast in the oven for 25-30 minutes, tossing halfway through.

Serving

  • Garnish with fresh parsley before serving.
  • Serve warm and enjoy!

Notes

Ensure not to overcrowd the baking sheet for crispy vegetables. Experiment with different vegetables or seasonings as desired. Leftovers taste even better the next day!
