  • 1 pound Green beans Fresh, trimmed
  • 2 tablespoons Olive oil To drizzle over vegetables
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Pepper To taste
  • 4 cloves Garlic, minced For flavor
  • 2 teaspoons Herbs (like thyme or rosemary) Fresh or dried for added flavor

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and trim the green beans, removing tough ends.
  • In a large mixing bowl, drizzle the olive oil over the green beans.
  • Add salt, pepper, and minced garlic to the bowl.
  • Toss everything together until the green beans are evenly coated.
  • Sprinkle the fresh or dried herbs over the green beans.
  • Spread the green bean mixture out in a single layer on a baking sheet.

Roasting

  • Place the baking sheet in the oven and roast the vegetables for about 20-25 minutes.
  • Midway through, stir or shake the vegetables for even cooking.
  • Check for doneness around the 20-minute mark; they should be tender and lightly browned.

Serving

  • Once done, let the vegetables cool slightly before serving.

Notes

For extra crispiness, let your oven preheat for a good 10-15 minutes. You can also add other vegetables like bell peppers or carrots.
