  • 1/2 cup breadcrumbs Helps to bind the meatballs together.

For the vegetable medley

  • 2 cups mixed vegetables Use bell peppers, zucchini, and carrots for sweetness.
  • 1 can (15 oz) tomato sauce Essential for cooking the meatballs.
  • to taste olive oil For cooking and adding flavor.

Instructions
 

Preparation

  • Start by heating a drizzle of olive oil in a large skillet over medium heat.
  • In a large bowl, combine the ground meat, breadcrumbs, grated Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix everything together well.
  • Shape the mixture into golf ball-sized meatballs.

Cooking

  • Carefully place the meatballs in the hot skillet and cook for about 5-7 minutes, turning occasionally to brown evenly.
  • Once browned, remove meatballs from the skillet and set aside.
  • In the same skillet, add mixed vegetables and sauté for about 5-7 minutes until tender.
  • Pour the tomato sauce into the skillet with the vegetables and stir well to combine.
  • Nestle the meatballs into the sauce, spooning some sauce over the top.
  • Cover the skillet and let everything simmer together for about 20-25 minutes.

Serving

  • Serve the meatballs warm, garnished with fresh parsley if desired.

Notes

For perfect results, preheat the skillet properly and consider adding crushed red pepper flakes for heat.
