  • 2 tablespoons olive oil For cooking and searing of the salmon.
  • to taste salt and pepper Season generously for maximum flavor.
  • 1 piece shallot, minced Adds subtle sweetness to the dish.
  • 2 cloves garlic, minced Enhances the flavor of the sauce.
  • 4 cups fresh spinach Preferred over frozen, but frozen can be used in a pinch.
  • 1 cup heavy cream Transforms the spinach into a creamy sauce.
  • 1/2 cup grated Parmesan cheese For a rich, savory flavor.
  • As needed lemon wedges for serving Adds brightness and acidity to the dish.

Instructions
 

Preparation

  • Season the salmon fillets with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium heat until hot.
  • Carefully place the salmon fillets in the skillet and cook for about 4-5 minutes, until golden crust forms.
  • Flip the salmon and cook for another 3-4 minutes until just cooked through. Remove and set aside.

Making the Sauce

  • In the same skillet, add more olive oil if necessary and sauté the minced shallots until soft and fragrant.
  • Add the minced garlic and sauté for about 30 seconds.
  • Add the fresh spinach and stir until wilted, about 2 minutes.
  • Pour in the heavy cream and bring to a gentle simmer, allowing it to thicken slightly.
  • Stir in the grated Parmesan cheese until it's fully melted and incorporated.
  • Return the salmon to the skillet and spoon the creamy sauce over it. Let it simmer for one minute.
  • Plate the salmon and generously top with the creamy spinach sauce. Serve with lemon wedges.

Notes

For best results, pat the salmon dry before seasoning and ensure the skillet is hot for a crispy skin. Can substitute salmon with chicken breasts or tofu, but adjust cooking times accordingly.
