Cheesecake Layer

Chocolate Cake Layers

  • 1 recipe chocolate layer cake (9-inch layers) Store-bought or homemade.

Frosting

  • 1 cup unsalted butter, softened Base for your frosting.
  • 1/2 cup caramel sauce Adds sweet, buttery flavor.
  • 4 cups powdered sugar For a smooth frosting.
  • 2 tablespoons milk To thin the frosting.
  • 1/2 teaspoon kosher salt Balances sweetness.

Ganache

  • 4 oz dark chocolate Elevates the ganache.
  • 1/3 cup heavy cream Brings everything together.
  • 2 tablespoons caramel sauce For drizzling.
  • 1 pinch kosher salt To tie things together.

Instructions
 

Prepare the Cheesecake Layer

  • Preheat your oven to 325°F (163°C).
  • Prepare a large roasting pan by placing it in the oven on the lower 2/3 rack as it preheats.
  • Wrap the bottom of your 9-inch springform pan with two layers of aluminum foil and spray it with nonstick spray.
  • Boil water for the water bath.
  • In a mixing bowl, beat cream cheese and sugar for 2-3 minutes until smooth.
  • Add salt and eggs one at a time, mixing thoroughly after each addition.
  • Beat in sour cream, heavy cream, and vanilla, then pour into the springform pan.
  • Place the pan in the roasting pan, pour boiling water in until it reaches 1 inch up the sides.
  • Bake for 45 minutes, then turn off the oven and let it sit for an additional 30 minutes.
  • Cool completely at room temperature then refrigerate.

Make the Chocolate Cake Layers

  • Follow the package instructions for a cake mix or use your favorite dark chocolate cake recipe.

Making the Frosting

  • Beat the softened unsalted butter for 2-3 minutes until light and fluffy.
  • Add caramel sauce, powdered sugar, milk, and kosher salt, then beat for another 4-5 minutes.

Assemble the Cake

  • On a cake platter, place one layer of your chocolate cake and top it with the frozen cheesecake.
  • Add the second layer of chocolate cake on top.
  • Frost the entire cake with salted caramel buttercream frosting.
  • Chill the frosted cake in the refrigerator.

Making the Ganache

  • In a microwave-safe bowl, mix dark chocolate and heavy cream.
  • Heat in 30-second intervals, stirring until smooth.
  • Let ganache cool slightly, then pour it over the assembled cake.
  • Drizzle with caramel sauce and sprinkle with kosher salt.

Notes

Make sure to keep ingredients at room temperature for better mixing. Don't rush the cooling process to prevent cracks in the cheesecake.
