Preparation

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry on a floured surface and fit it into a pie dish.

Cooking

  • In a skillet, cook the sausage over medium heat until browned.
  • Sprinkle the flour over the sausage and stir to combine, cooking for another minute.
  • Gradually add the milk, stirring constantly until thickened. Season with salt and pepper.
  • Pour the sausage gravy into the pastry shell.
  • Cover with another layer of puff pastry and seal the edges.
  • Cut vents in the top to allow steam to escape.
  • Bake for 30-35 minutes or until golden brown.
  • Let cool slightly before serving, garnished with green onions if desired.

Notes

Make sure to roll out the puff pastry on a floured surface to prevent sticking. Don’t skip the step of cutting vents in the top pastry; this keeps the pie from getting soggy. For a spicier version, you can add red pepper flakes to the sausage as it cooks. You can customize the filling by adding vegetables like diced bell peppers, mushrooms, or spinach. For a cheese lover’s twist, consider adding some shredded cheese into the gravy before pouring it into the pastry shell.
