  • 1 pound sausage Any type of sausage like turkey, chicken, or pork
  • 4 cups green beans, trimmed Can use frozen green beans directly
  • 4 cups potatoes, diced Use waxy potatoes for best texture
  • 1 large onion, chopped
  • 2 cups chicken broth Use vegetable broth for a vegetarian version
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Preparation

  • Preheat oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and sausage, cooking until sausage is browned.
  • In a large casserole dish, combine green beans, diced potatoes, cooked sausage mixture, chicken broth, garlic powder, paprika, salt, and pepper.
  • Stir well to combine all ingredients.

Baking

  • Cover with foil and bake in preheated oven for 45 minutes.
  • Remove foil and bake for an additional 15 minutes, until potatoes are tender and casserole is bubbly.
  • Let sit for a few minutes before serving.

Notes

Serve this casserole hot, paired with a simple side salad or warm bread. For extra flavor, you can sprinkle some grated cheese on top before serving. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 2 months. Thaw in the refrigerator before reheating.
