  • 1 lb sausage
  • 4 cups green beans (fresh or frozen)
  • 4 medium potatoes, sliced Slice evenly for uniform cooking.
  • 1 onion, chopped
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional) Sprinkle on top before the final baking.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the sausage over medium heat until browned; drain excess fat.
  • In a large mixing bowl, combine the green beans, potatoes, onion, cooked sausage, and chicken broth.
  • Season with salt and pepper.
  • Pour the mixture into a greased casserole dish.

Baking

  • Cover with foil and bake for 45 minutes.
  • If using cheese, uncover the dish, sprinkle cheese on top, and bake for an additional 15 minutes, or until the potatoes are tender and cheese is bubbly.

Notes

To store leftovers, let the casserole cool completely. Cover it tightly with plastic wrap or aluminum foil and place it in the refrigerator for up to 3 days. For longer storage, freeze it in an airtight container for up to 2 months. You can add other vegetables like carrots or bell peppers for extra flavor and nutrition. Use spicy sausage or add red pepper flakes for a kick.
