Ingredients
  

Main Ingredients

  • 1 package Italian sausage Mild or spicy based on preference
  • 1 can canned tomatoes Diced or crushed tomatoes work well
  • 1 package fresh cheese tortellini Use any preferred brand
  • 2 cups arugula Can substitute with other greens
  • 4 cups broth (chicken or vegetable) For vegetarian version, use vegetable broth
  • 1 tablespoon olive oil For sautéing
  • 1 medium onion Chopped
  • 3 cloves garlic Minced

Herbs and Spices

  • 1 teaspoon basil Dried or fresh
  • 1 teaspoon oregano Dried or fresh
  • to taste salt and pepper For seasoning

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  • Add Italian sausage, breaking it up with a spoon, and cook until browned.

Cooking

  • Stir in canned tomatoes, broth, and herbs. Bring to a simmer.
  • Add the fresh cheese tortellini and cook according to package instructions until tender.
  • Stir in arugula and cook until wilted.
  • Season with salt and pepper to taste. Serve hot.

Notes

Serve with grated Parmesan cheese on top and crusty bread for dipping. Store in an airtight container for 3-4 days in the fridge, or freeze without arugula.
