Ingredients
  

Main ingredients

  • 1 pound shrimp, peeled and deveined Use fresh shrimp for best flavor.
  • 1 head broccoli, cut into florets
  • 8 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce Adjust to taste.
  • 1 teaspoon sesame oil Optional.
  • Salt and pepper to taste

Instructions
 

Preparation

  • Wash and cut the broccoli and mushrooms. Peel and devein the shrimp. Mince the garlic.

Cooking

  • Heat the olive oil in a skillet over medium-high heat. Add minced garlic and sauté for 30 seconds.
  • Add shrimp and cook for 2-3 minutes per side, until they turn pink. Remove shrimp and set aside.
  • Add broccoli and mushrooms to the skillet. Sauté for 5-7 minutes until they are tender-crisp.
  • Return the shrimp to the skillet. Stir in soy sauce and sesame oil. Season with salt and pepper. Cook for another minute.

Serving

  • Serve immediately over rice or quinoa if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 2 days. To heat, microwave or sauté briefly in a pan. Feel free to add other vegetables like bell peppers or snap peas for extra color and nutrients.
