Ingredients
  

For the filling

  • 1 lb ground beef Can also use ground turkey or chicken for a leaner option.
  • 1 cup diced carrots Adds sweetness and color.
  • 1 cup diced bell peppers Use a mix for a vibrant look.
  • 1/2 cup frozen peas Adds color and flavor.
  • 1 medium onion, diced Foundation of flavor.
  • 2 cloves garlic, minced For aromatic flavor.
  • 1 tbsp tomato paste Thickens and enriches filling.
  • 1 cup beef broth Keeps the filling moist.
  • 1 tbsp Worcestershire sauce Adds depth of flavor.
  • 2 tbsp all-purpose flour Helps thicken the mixture.
  • 1 tsp dried thyme Brings aroma to the dish.
  • Salt and pepper to taste To enhance flavor.

For the crust

  • 1 sheet puff pastry, thawed Ensure it's fully thawed.
  • 1 egg beaten For egg wash to give a golden finish.

Instructions
 

Preparation

  • Heat a large skillet over medium heat and add the ground beef. Cook until browned, then drain any excess fat.
  • Add the diced onions and minced garlic to the skillet. Sauté until onions are translucent and fragrant.
  • Toss in diced carrots and bell peppers. Sauté for about 5-7 minutes until vegetables are tender.
  • Stir in tomato paste, flour, and thyme. Gradually add beef broth while continuously stirring.
  • Add frozen peas and season with salt and pepper to taste. Let the mixture simmer for a few minutes then set it aside to cool slightly.

Assembly

  • Pour the beef and vegetable mixture into a pie dish.
  • Roll out the puff pastry over the mixture and seal edges by crimping or using a fork. Cut small slits in the top for steam to escape.

Baking

  • Brush the top of the puff pastry with the beaten egg for a golden finish.
  • Preheat the oven to 375°F and bake the pot pie for 25-30 minutes or until the crust is golden brown.

Notes

For a lighter and crispier crust, work with very cold ingredients and chill the pastry before rolling it out. Let the filling cool before adding the top crust to avoid a soggy bottom.
