  • 1/2 cup milk Keeps everything together.

Mix-ins

  • 1/4 cup sun-dried tomatoes, chopped Brings a lovely sweetness.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Line a muffin tin with paper liners or grease the cups.

Mixing Ingredients

  • In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, and black pepper.
  • In another bowl, whisk together the wet ingredients: olive oil, Greek yogurt, milk, and eggs until smooth.
  • Pour the wet mixture into the dry ingredients and mix until just combined; a few lumps are fine.
  • Gently fold in the feta cheese, sun-dried tomatoes, and black olives.

Baking

  • Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  • Sprinkle fresh herbs on top, if using.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow muffins to cool slightly in the tin before transferring to a wire rack.

Notes

For a crispier exterior, bake on the middle rack of the oven. Let cool on a wire rack for best texture. You can also substitute feta for goat cheese or various vegetables based on preference.
