Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, heat the olive oil or butter over medium heat.
  • Sauté the diced onions and minced garlic until translucent, about 5-7 minutes.
  • Add the diced chicken to the skillet and cook until browned and fully cooked, about 5-7 minutes.
  • In a large bowl, combine the cooked rice, steamed broccoli, sautéed chicken, cheddar cheese, and cream. Toss gently.
  • Season with salt and pepper to taste.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Top with the crushed buttery crackers.
  • Bake for 25-30 minutes, or until bubbling and golden brown.
  • Let cool slightly before serving.

Notes
