  • 1 teaspoon baking powder Helps the cake rise.
  • 1 teaspoon baking soda Contributes to leavening.
  • 1/2 teaspoon salt Enhances flavors.

For the Crumb Topping

  • 1 cup brown sugar Gives the topping a caramelized flavor.
  • 1 tablespoon ground cinnamon Provides a warm, spicy hug.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs, sour cream, and vanilla. Mix until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  • Pour half of the batter into the prepared baking dish and spread evenly.
  • In a separate bowl, combine the brown sugar and ground cinnamon to create the crumb topping.
  • Sprinkle half of the crumb mixture over the batter in the pan.
  • Pour the remaining batter over the crumb topping and spread it gently.
  • Sprinkle the remaining crumb topping on top.
  • Bake for about 30-35 minutes until a toothpick comes out clean.
  • Allow the cake to cool in the pan before serving.

Notes

For best results, use room temperature ingredients and avoid overmixing. This cake pairs nicely with whipped cream, vanilla ice cream, or fresh berries. Store leftovers in an airtight container at room temperature for 2-3 days.
