Preparation

  • Pat the scallops dry with a paper towel and season with salt and pepper on both sides.

Cooking Scallops

  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
  • Gently lay the scallops in the hot skillet, ensuring not to overcrowd them. Cook for about 2-3 minutes without moving.
  • Flip each scallop with tongs and cook for an additional 1-2 minutes until just opaque in the center.

Making the Sauce

  • Once seared, remove the scallops and cover with foil to keep warm.
  • In the same skillet, add the butter and minced garlic, cooking until fragrant, about 30 seconds.
  • Squeeze in the lemon juice and stir to combine.

Finishing Touch

  • Return the warm scallops to the skillet and gently coat them in the sauce for one minute.
  • Serve immediately, garnished with chopped parsley.

Notes
