Preparation

  • Pat the scallops dry using a paper towel and sprinkle them with salt and pepper.

Cooking

  • Heat the olive oil over medium-high heat in a large skillet until it shimmers.
  • Add the scallops to the skillet, ensuring they aren't overcrowded. Sear for 2-3 minutes on each side until golden brown.
  • Remove the scallops from the skillet and set aside.
  • In the same skillet, lower the heat to medium and add the unsalted butter and minced garlic. Sauté for about a minute until fragrant.
  • Squeeze the juice of one fresh lemon into the skillet and season with additional salt and pepper.
  • Return the scallops to the skillet, gently tossing them in the sauce to coat.
  • Plate the scallops and garnish with chopped parsley. Serve immediately.

Notes

For best results, use fresh sea scallops. If using frozen, thaw them completely and pat dry to prevent water from accumulating in the pan. Consider adding a pinch of red pepper flakes for extra flavor.
