  • 1 cup unsalted butter, softened Make sure your butter is softened to room temperature.
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt Adjust if using salted butter.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Gradually add in the flour and salt, mixing until the dough comes together.
  • Stir in the vanilla extract.
  • Roll the dough into small balls or shape it into a log and slice it.
  • Place on ungreased baking sheets.
  • Bake in the preheated oven for 15-20 minutes or until lightly golden.
  • Let cool before serving.

Notes

Shortbread cookies are best enjoyed fresh, can be served with tea or coffee, and can be topped with powdered sugar or dipped in chocolate. Store in an airtight container for up to a week at room temperature.
