  • 1 lb Shrimp (peeled and deveined)
  • 1 cup Corn (fresh or frozen)
  • 1 cup Diced potatoes
  • 1 small Onion (chopped)
  • 2 cloves Garlic (minced)
  • 4 cups Chicken broth
  • 2 cups Heavy cream
  • 2 tbsp Butter
  • 1 tsp Old Bay seasoning
  • to taste Salt and pepper
  • Chopped parsley for garnish

Preparation

  • Gather your ingredients.
  • Wash and dice your potatoes and onion.
  • In a large pot over medium heat, melt the butter.
  • Add your chopped onion and minced garlic, cooking for about 3-5 minutes until translucent.
  • Add the diced potatoes and Old Bay seasoning, stir and cook for another 5 minutes.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Once the potatoes are tender, add the corn.
  • Stir in the shrimp and cook for about 3-4 minutes until pink and opaque.
  • Reduce heat to low and stir in the heavy cream until heated through.
  • Season with salt, pepper, and optionally a sprinkle of paprika.
  • Ladle into bowls and garnish with chopped parsley.

Notes

Consider using homemade chicken broth for enhanced flavor. Add a dash of cayenne pepper for a kick. Serve with crusty French bread or cornbread for an ideal pairing.
