Ingredients
  

Main Ingredients

  • 8 oz noodles Any type of noodles can be used.
  • 1 cup shrimp, peeled and deveined Fresh shrimp recommended.
  • 2 large eggs Beaten for scrambling.
  • 1 cup mushrooms, sliced Button or shiitake mushrooms work well.

Seasoning

  • 2 tablespoons soy sauce Adjust according to taste.
  • 1 tablespoon sesame oil For sautéing.
  • to taste Salt and pepper For seasoning.

Garnish

  • Green onions Chopped, for garnish.

Instructions
 

Cooking the Noodles

  • Cook the noodles according to package instructions. Drain and set aside.

Sautéing

  • In a skillet, heat sesame oil over medium heat. Add the mushrooms and sauté until they’re tender.
  • Add the shrimp and cook until pink and opaque, about 3-4 minutes.

Scrambling Eggs

  • In a bowl, beat the eggs and pour them into the skillet. Scramble them gently with the shrimp and mushrooms.

Combining

  • Once the eggs are cooked, add the cooked noodles and soy sauce. Toss everything together until well combined.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with chopped green onions.

Notes

Refrigerate any leftovers in an airtight container for up to 2 days. Reheat before serving. Consider adding other vegetables or proteins based on preference.
