  • 1 cup peas Fresh or frozen, they’re packed with nutrients.
  • 1 medium onion, chopped Aromatic base for the stir-fry.
  • 2 large eggs, beaten Brings richness and binds everything.
  • 3 tablespoons soy sauce Gives the dish its savory flavor.
  • 2 tablespoons vegetable oil Essential for stir-frying.
  • salt and pepper to taste Simple seasonings that enhance the flavors.
  • green onions for garnish Fresh finish that elevates the dish.

Preparation

  • Gather all your fresh, colorful ingredients and make sure everything is chopped and ready to go.
  • In a large skillet or wok, heat the vegetable oil over medium heat.
  • Add the chopped onion to the hot oil and sauté until translucent and tender, about 2-3 minutes.
  • Add the shrimp to the pan and cook until they turn pink and opaque, about 3-4 minutes.
  • Create space in the pan and pour the beaten eggs onto the other side, scrambling them until just set.
  • Add the diced carrots and peas to the pan, stirring well and cooking for about 3 minutes.
  • Mix in the cooked rice, breaking any clumps as you go.
  • Drizzle the soy sauce over everything and mix well to coat the rice evenly.
  • Taste and adjust the seasoning with salt and pepper.
  • Serve hot, garnished with green onions.

Notes

For a truly authentic taste, consider adding oyster or sesame sauce along with soy sauce. You can easily adapt this recipe to use leftover vegetables or proteins you have on hand. Leftovers can be stored in an airtight container in the fridge and will last about three to four days.
