Ingredients
  

For the Casserole

  • 1 cup stone-ground grits Use stone-ground for best texture.
  • 4 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup whole milk
  • 1 pound raw shrimp, peeled and deveined Can use frozen shrimp, thawed before cooking.
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional) Adjust based on spice preference.

Preparation

  • Preheat your oven to 350°F and grease a 9x9-inch baking dish.
  • In a saucepan, bring the water and salt to a boil.
  • Stir in the grits and reduce the heat to low. Simmer for 20–25 minutes, stirring occasionally, until thick and creamy.
  • Remove from heat and stir in the butter, cheddar cheese, and milk until smooth.
  • In a skillet over medium heat, sauté the onion and garlic until tender.
  • Add the shrimp, paprika, pepper, and optional cayenne. Cook just until the shrimp turn pink, about 3–4 minutes.
  • Gently fold the shrimp mixture into the grits.
  • Pour into the prepared dish and smooth the top.

Baking

  • Bake for 25–30 minutes, or until set and lightly golden on top.
  • Let cool slightly before serving.

Notes

Shrimp & Grits Casserole can be served as a main dish, paired with a fresh salad or crusty bread. For extra color and flavor, sprinkle green onions or parsley on top before serving. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for longer storage. Reheat in the oven or microwave.
