Preparation

  • Marinate the Beef: In a medium bowl, combine the sliced flank steak with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for about 15 minutes.

Cooking

  • Heat the Pan: Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.
  • Cook the Beef: Add the marinated beef to the skillet and stir-fry until browned and cooked through, about 4-5 minutes. Remove and set aside.
  • Stir-Fry the Vegetables: In the same skillet, toss in the sliced onions and bell peppers. Stir-fry for 3-4 minutes until tender but slightly crisp.
  • Add Aromatics: Add the minced garlic and ginger, stir-fry for another 1-2 minutes.
  • Prepare the Sauce: In a small bowl, whisk together 1/4 cup soy sauce, beef broth, oyster sauce, hoisin sauce, sugar, black pepper, and red pepper flakes.
  • Combine Everything: Return the cooked beef to the skillet, pour the sauce over, and stir for 2-3 minutes until thickened.
  • Serve it Up: Serve the pepper steak over rice, garnished with chopped green onions.

Notes

To keep the meat juicy, avoid overcrowding the skillet. Adding a splash of water can help steam the veggies quickly while maintaining their crunch. Serve alongside steamed broccoli, bok choy, or egg rolls for a complete meal.
