Ingredients
  

Main Ingredients

  • 1 red pepper, diced
  • 2 jalapeños (unseeded), diced Leave in some seeds for extra spice, if desired.
  • 1 can corn, drained
  • 1/2 can diced olives
  • 16 oz fat-free cream cheese (softened) Regular cream cheese can be used for a creamier texture.
  • 1 packet Hidden Valley Ranch dip seasoning mix

Preparation

  • In a large bowl, mix all the ingredients together until well combined.

Serving

  • Serve chilled with a selection of your favorite crackers or raw vegetables such as carrots, celery, and bell pepper strips.

Notes

Keep leftovers in an airtight container in the refrigerator for about 3 to 5 days. Stir well before serving again as it may thicken. Make it ahead of time for better flavor meld.
