  • 4 pounds corned beef brisket
  • 1 piece onion, quartered
  • 3 cloves garlic, minced
  • 1 head of cabbage, cut into wedges
  • 4 pieces carrots, peeled and cut into chunks
  • 12 pieces baby red potatoes, halved
  • 2-3 cups beef broth Enough to cover the meat
  • 1 teaspoon black pepper
  • 2 teaspoons mustard seeds
  • 1 leaf bay leaf

Instructions
 

Preparation

  • Place the corned beef brisket in the slow cooker and add the onion, garlic, and spices from the seasoning packet.
  • Pour in enough beef broth to cover the meat.

Cooking

  • Cook on low for 8-10 hours or until tender.
  • About 1 hour before serving, add the cabbage, carrots, and baby red potatoes to the slow cooker.
  • Cover and cook until the vegetables are tender.

Serving

  • Remove the corned beef, slice against the grain, and serve with the vegetables.

Notes

For extra flavor, sear the corned beef brisket in a skillet before placing it in the slow cooker. Customize the vegetables based on your preference. Turnips or parsnips can be great additions. To help with cleanup, line the slow cooker with a liner for easy serving.
