Ingredients
  

Main Ingredients

  • 1.5 lbs chicken breasts Use boneless, skinless chicken breasts.
  • 1 onion, sliced
  • 2 bell peppers, sliced Mix different colors for visual appeal.
  • 3 garlic cloves, minced
  • 1 can diced tomatoes with green chilies
  • 1 packet fajita seasoning Store-bought or homemade.
  • 1/2 cup chicken broth Low sodium is preferred.
  • 2 tbsp olive oil
  • to taste Salt & pepper

Instructions
 

Preparation

  • Layer the sliced veggies (onion and bell peppers) in the bottom of the slow cooker.
  • Place the chicken breasts on top of the veggies.
  • Sprinkle the fajita seasoning over the chicken, then add the diced tomatoes, chicken broth, and olive oil.

Cooking

  • Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • Once done, shred the chicken with two forks, stir everything together, and let it sit for a few minutes to let the flavors blend.

Serving

  • Serve in warm tortillas or over rice for a complete meal.

Notes

For extra flavor, marinate the chicken in fajita seasoning and olive oil for a few hours before cooking. Add extra veggies like zucchini, corn, or mushrooms for more nutrition. Adjust spiciness with mild or hot diced tomatoes. Leftovers can be stored in an airtight container for 3-4 days in the refrigerator or frozen for up to 2-3 months.
