Main Ingredients

  • 2-3 lbs Chuck roast Select a well-marbled cut for juiciness.
  • 4 cups Beef broth Chicken broth or water can be used as substitutes.
  • 4 large Carrots (chopped)
  • 4 medium Potatoes (cubed)
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)

Seasoning and Oils

  • 2 tbsp Olive oil For searing the roast.
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Dried thyme
  • 1 tsp Rosemary Fresh herbs enhance flavor.

Instructions
 

Preparation

  • Season the chuck roast generously with salt, pepper, thyme, and rosemary.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the roast on all sides until nicely browned, about 4-5 minutes per side.
  • Chop the carrots, potatoes, onion, and garlic into even-sized pieces.

Cooking

  • Transfer the seared roast to the slow cooker, adding the chopped vegetables around it.
  • Pour 4 cups of beef broth over the ingredients in the slow cooker.
  • Cover and set the slow cooker to low for 8 hours.
  • Check for tenderness after 8 hours; the roast should flake apart easily.
  • Using tongs or a slotted spoon, remove the roast and vegetables from the slow cooker and serve on a platter with some of the broth ladled over.

  • Gather your family and enjoy the meal, celebrating the love and effort behind it.

Notes

For maximum flavor, consider adding a splash of red wine to the broth. Store leftovers in an airtight container for 3-4 days.
