  • In a slow cooker, combine the lemon juice, olive oil, oregano, thyme, garlic, salt, and pepper.

  • Pour in the chicken broth and stir to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through.
  • About 30 minutes before serving, cook the rice according to package instructions.

Serving

  • Once done, shred the chicken in the slow cooker and mix it with the juices.
  • Serve the chicken and sauce over fluffy rice, garnished with fresh parsley.

Notes

Make sure to coat the chicken fully in the marinade to enhance the flavor. For a stronger lemon flavor, you can add more lemon juice or some lemon zest. Let the rice sit covered after cooking for a few minutes for the best fluffiness. You can also add vegetables like carrots, bell peppers, or snap peas to the slow cooker for added flavor.
