Ingredients
  

Main Ingredients

  • 3 to 4 pounds Beef chuck roast
  • 2 medium Onions, chopped
  • 4 Carrots, cut into chunks
  • 1 pound Baby potatoes
  • 2 cups Beef broth

Spices and Seasoning

  • Spices (like garlic powder, onion powder, and thyme), to taste
  • Salt, to taste Don't skimp on seasoning
  • Pepper, to taste
  • Flour (for thickening), optional To thicken gravy

Instructions
 

Preparation

  • Season the beef chuck roast generously with salt, pepper, and your choice of spices.
  • Heat a skillet over medium-high heat and sear the roast on all sides until browned (optional).
  • In your slow cooker, layer the chopped onions, carrots, and baby potatoes evenly.
  • Place the seared roast right on top of the vegetables.
  • Pour beef broth over the roast and veggies until just covering the bottom.
  • Add another sprinkle of salt, pepper, and any additional spices.
  • Cover the slow cooker and set it on low for about 8 hours.
  • A couple of hours before it’s done, check if the meat is tender.
  • If desired, mix flour with water to create a slurry and stir into the cooking juices about 30 minutes before serving.

Notes

Serve with creamy mashed potatoes, dinner rolls, or roasted vegetables. Leftovers can be refrigerated for 3-4 days.
