Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium-high heat.
  • Generously season the chuck roast with salt and pepper and sear on all sides until browned, about 4-5 minutes per side.
  • In the bottom of the slow cooker, layer the halved baby potatoes and carrots, followed by the onion and garlic.
  • In a small bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary.
  • Pour the sauce mixture over the vegetables and gently place the seared roast on top.
  • Cover with the slow cooker lid and cook on low for 8 hours or high for 4-5 hours.
  • Once cooked, shred the beef right in the slow cooker using two forks and serve with vegetables, spooning juices over everything.
  • Garnish with fresh parsley before serving.

Notes

For extra flavor depth, consider adding a splash of red wine to the broth. If you prefer thicker gravy, stir in a cornstarch slurry (mix cornstarch with cold water) during the last hour of cooking.
