  • 6 slices cooked bacon, diced
  • 3-4 cups good-quality chicken or vegetable stock
  • 2 pounds Yukon gold potatoes, peeled and diced Best flavor and texture
  • 1 medium white or yellow onion, peeled and diced
  • 4 tablespoons bacon grease (or butter) For cooking the roux
  • 1/3 cup all-purpose flour To create the roux

Preparation

  • In a slow cooker, combine the diced bacon, chicken or vegetable stock, potatoes, and onion.
  • Heat the bacon grease (or butter) in a skillet over medium heat and stir in the flour to create a roux. Cook for a few minutes until golden.
  • Slowly whisk in some of the stock from the slow cooker into the roux to create a smooth mixture.
  • Pour the roux back into the slow cooker and stir everything together.
  • Cook on low for 6-8 hours or until the potatoes are tender.
  • Use a potato masher to mash some of the potatoes for a creamy texture.
  • Serve warm.

Notes

Serve with additional cooked bacon, shredded cheese, sour cream, or chopped green onions. Great with crusty bread or a salad. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
