Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 pkg taco seasoning
  • 1 pkg ranch seasoning mix
  • 1 cup chicken stock
  • 1/4 cup cilantro chopped

Taco Assembly

  • 12 pieces flour or corn tortillas
  • 1 bottle ranch dressing
  • to taste cheese for topping
  • to taste tomatoes for topping
  • to taste lettuce for topping
  • to taste onions for topping

Preparation

  • Add the chicken breasts to a slow cooker.
  • Sprinkle the taco seasoning and ranch seasoning mix over the chicken.
  • Pour the chicken stock into the slow cooker.
  • Cover and cook on high for 3-4 hours or on low for 6-8 hours.
  • Once cooked, shred the chicken with two forks and mix in the chopped cilantro.

Assembly

  • Place the shredded chicken into the taco shells.
  • Top with your favorite toppings like cheese, tomatoes, lettuce, onions, and ranch dressing.

Notes

For extra flavor, marinate the chicken in the ranch and taco seasonings overnight before cooking. Use fresh cilantro for a bright taste. Experiment with different toppings like avocado, jalapeños, or corn to customize your tacos. Leftover shredded chicken can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, warm it in the microwave or on the stove. You can also freeze the shredded chicken for up to 3 months.
