Preparation

  • Prepare Your Ingredients: Wash and chop your veggies, slice the sausage and dice the potatoes.

Cooking

  • Heat the Skillet: Heat 1 tablespoon of olive oil over medium heat until hot.
  • Cook the Potatoes: Add diced potatoes, salt, pepper, smoked paprika, and garlic powder. Cook for about 10-12 minutes until golden brown.
  • Set the Potatoes Aside: Remove the cooked potatoes from the skillet and set aside.
  • Sizzle the Sausage: In the same skillet, add remaining olive oil and the sausage. Cook until nicely browned, about 3-4 minutes.
  • Add Your Veggies: Add onion, bell pepper, and garlic to the skillet. Cook for 5-7 minutes until softened.
  • Combine Everything: Return the cooked potatoes to the skillet and stir all ingredients. Cook for another 2-3 minutes.
