  • 1 lb smoked sausage, sliced Kielbasa or your favorite sausage works best.
  • 4 cups baby potatoes, halved Diced regular potatoes can also be used.
  • 1 medium bell pepper Red, green, or yellow works well.
  • 1 medium onion, chopped For a sweet and savory base.
  • 3 cloves garlic, minced Can’t have too much garlic!
  • 2 tablespoons olive oil For frying.
  • 1 teaspoon paprika Adds a delightful warmth to the dish.
  • 1 teaspoon Italian seasoning Or your choice of herbs.
  • to taste salt and pepper To elevate the flavors.
  • to taste fresh parsley, chopped For garnish and adds a pop of color.

Instructions
 

Preparation

  • If using whole baby potatoes, cut them in half; if using regular potatoes, dice them into small cubes.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes, sprinkle with salt, pepper, and paprika. Cook for 10-15 minutes, stirring occasionally, until golden and tender.
  • Push the potatoes to one side of the skillet. Add the remaining tablespoon of olive oil, sliced sausage, onion, and bell pepper. Sauté for 5-7 minutes until the sausage is heated through and vegetables are softened.
  • Add the minced garlic and Italian seasoning. Sauté for another 1-2 minutes until aromatic.
  • Remove from heat and garnish with freshly chopped parsley before serving.

Notes

For extra crispy potatoes, consider parboiling them first. You can add additional vegetables like zucchini or corn. This dish pairs well with a garden salad or crusty bread.
