  • 1 lb chicken breast Cut in half lengthwise
  • 8 pieces bacon Cooked until crispy
  • 1 onion sliced For topping
  • Shredded Colby Jack cheese To top the chicken
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Honey mustard For brushing on chicken

Preparation

  • Cut the chicken breasts in half lengthwise to make them thinner.
  • Heat a griddle or skillet over medium-low heat and add the bacon. Cook the bacon until crispy.
  • Remove the bacon from the griddle and spread out the remaining bacon grease.
  • Add the chicken and sliced onion to the griddle. Season the chicken with salt, pepper, onion powder, garlic powder, and paprika.

Cooking

  • Cook the chicken on both sides until golden brown and the internal temperature reaches 165 degrees F.
  • Once cooked, brush some honey mustard over the chicken. Top it with the cooked onions and sprinkle Colby Jack cheese on top.
  • Cover the smothered chicken with a griddle dome or a lid until the cheese melts.
  • Finish by topping with crumbled bacon and enjoy!

Notes

For extra flavor, marinate the chicken in honey mustard for a few hours before cooking. Use a meat thermometer to ensure that the chicken is cooked to the right temperature. Feel free to substitute Colby Jack cheese with your favorite cheese, like cheddar or mozzarella. Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for 2-3 months.
