Preparation

  • Gather all your ingredients and wash the green beans and potatoes thoroughly.
  • Peel (if desired) and dice your potatoes into bite-sized pieces.
  • Chop the onion and mince the garlic.

Cooking

  • Heat the olive oil in a large pot or skillet over medium heat.
  • Add the chopped onion and minced garlic, sauté for about 3-5 minutes until translucent.
  • Stir in the diced potatoes and cook for about 5 minutes.
  • Pour in the chicken or vegetable broth.
  • Sprinkle in the salt, pepper, and dried thyme, then stir to combine.
  • Add the fresh green beans and give everything a good stir.
  • Cover the pot and lower the heat to a simmer, cooking for about 20-25 minutes.
  • Check the texture; if thicker consistency is desired, leave the lid off for the last few minutes of cooking.
  • Once tender, serve and enjoy!

Notes

Feel free to experiment with fresh herbs like rosemary for added flavor. Store leftovers in an airtight container in the fridge for 3-4 days.
