For the Coating

  • 1/4 teaspoon onion powder Brings subtle sweetness.

For Cooking

  • 2 tablespoons olive oil or butter Butter adds rich taste.
  • 1 piece onion, diced Adds flavor to the gravy.
  • 2 cups chicken broth Base for gravy.
  • 1 cup heavy cream Makes the gravy creamy.
  • 1 tablespoon Worcestershire sauce Adds umami flavor.

Instructions
 

Preparation

  • Pat the pork loin chops dry with a paper towel.
  • In a shallow dish, whisk together the flour, salt, black pepper, garlic powder, and onion powder.
  • Dredge each pork chop in the seasoned flour, shaking off excess flour.

Cooking

  • In a large skillet over medium heat, add olive oil or butter.
  • Fry the pork chops for about 4-5 minutes on each side until golden brown.
  • Transfer the cooked chops to a plate and cover with foil to keep warm.
  • In the same skillet, add the diced onion and sauté until soft and translucent, about 3-4 minutes.
  • Stir in the chicken broth, scraping up any brown bits.
  • Pour in the heavy cream and Worcestershire sauce, bringing the mixture to a simmer.
  • Nestle the pork chops back into the skillet and cover; let simmer for about 5-10 minutes.
  • Serve the pork chops generously topped with gravy.

Notes

For extra flavor, consider adding chopped fresh herbs like rosemary or thyme towards the end of cooking. Ensure your oil is hot enough before adding chops for a nice crust. Store leftovers in an airtight container in the fridge.
