Ingredients
  

For the Cookies

  • 1 cup Unsalted Butter (softened) Make sure your butter is softened but not melted.
  • 1/2 cup Powdered Sugar (plus more for dusting)
  • 1 tsp Vanilla Extract Adds warmth to the cookies.
  • 2 cups All-Purpose Flour
  • 1 cup Chopped Nuts (walnuts or pecans) If you prefer nut-free, you can leave this out entirely.
  • 1/4 tsp Salt

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a large mixing bowl, cream together the softened unsalted butter and ½ cup of powdered sugar until light and fluffy.
  • Mix in one teaspoon of vanilla extract until combined.
  • In another bowl, whisk together all-purpose flour, chopped nuts, and salt.
  • Gradually add the dry mixture to the wet mixture in three parts, mixing until just combined.
  • Roll the dough into small balls, about one inch in diameter, and place them on ungreased baking sheets.

Baking

  • Bake in the preheated oven for 10-12 minutes, until bottoms are lightly golden.
  • Remove from the oven and cool on the baking sheet for 5-10 minutes.
  • Roll each cookie in remaining powdered sugar and then transfer to a wire rack to cool completely.

Notes

These cookies can be frozen and still taste wonderful when thawed. Enjoy them with coffee or tea.
