Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  • In another large bowl, use an electric mixer to cream the softened butter with granulated sugar and brown sugar until smooth and creamy.
  • Beat in the egg and molasses until well combined.
  • Gradually add the dry mixture to the wet ingredients and mix gently until just combined.

Baking

  • Roll the dough into tablespoon-sized balls.
  • Roll each dough ball in sugar.
  • Place on a baking sheet lined with parchment paper, leaving space between each.
  • Bake for 8-10 minutes, until edges are slightly crispy and centers remain soft.
  • Cool on a wire rack before enjoying.

Notes

For an extra touch, add a sprinkle of cinnamon on top before baking. Let the cookie dough rest in the fridge for about an hour for better flavor.
