Ingredients
  

For the cobbler

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder For a richer taste, use dark chocolate cocoa powder.
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted Make sure it is completely melted.
  • 1 cup boiling water Do not stir after adding.
  • 1/4 cup chocolate chips Optional; can experiment with different types.

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  • In a bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  • Stir in vanilla, milk, and melted butter until smooth. Pour batter into the prepared dish.
  • Sprinkle chocolate chips (if using) over the batter. Carefully pour boiling water evenly over the top (don't stir!).

Baking

  • Bake for 35-40 minutes, until the top is set, but the center is still slightly gooey.

Serving

  • Serve warm with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave if desired. You can serve it cold for a different experience. Experiment with toppings like nuts or caramel drizzle.
