  • 1 teaspoon onion powder
  • to taste Salt

Preparation

  • Soak the catfish fillets in buttermilk for at least 30 minutes.
  • In a shallow dish, mix cornmeal, cayenne pepper, garlic powder, onion powder, salt, and pepper.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Remove the catfish from the buttermilk, allowing excess to drip off.
  • Dredge the fillets in the cornmeal mixture, coating them well.
  • Fry the catfish in hot oil for about 3-4 minutes on each side, until golden brown and crispy.
  • Remove the fried catfish from the pan and place on paper towels to drain excess oil.
  • Serve hot.

Notes

For extra flavor, let the catfish soak in buttermilk longer. Make sure the oil is hot before frying and avoid overcrowding the pan. Variations include adding spices like paprika or dried herbs.
