Ingredients
  

For the Chicken Coating

  • 1 cup milk You can use buttermilk for a richer flavor.
  • 2 beaten eggs 2 beaten eggs
  • 2 cups all-purpose flour
  • 2 teaspoons paprika
  • 1/2 teaspoon poultry seasoning
  • 4 teaspoons garlic salt
  • 2 teaspoons black pepper

For Frying

  • oil Use vegetable or canola oil with a high smoke point.

Instructions
 

Preparation

  • In a bowl, whisk together the beaten eggs and milk until combined.
  • In another bowl, mix the flour with paprika, poultry seasoning, garlic salt, and black pepper.
  • Dip chicken pieces into the egg mixture, allowing excess to drip off, then roll them in the flour mixture until well coated.

Cooking

  • Heat oil in a skillet over medium heat until hot, but not smoking.
  • Fry chicken pieces for about 15-20 minutes on each side or until golden brown and cooked through.
  • Drain chicken on paper towels to soak up excess oil, then serve hot.

Notes

For extra crunch, double-dip the chicken in the egg and flour mixtures. Let the chicken rest after frying for better juices.
