  • In a large pot over medium heat, add the chopped bacon and cook for about 5-7 minutes until crispy.
  • Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.
  • Add the chopped onion to the pot and sauté for about 5 minutes until translucent.
  • Toss in the minced garlic and cook for an additional minute.
  • Add the fresh green beans and stir to coat them in the bacon drippings.
  • Pour enough water or broth to cover the green beans and season with salt and pepper.
  • Bring the mixture to a gentle boil, then reduce to low heat and cover the pot.
  • Let it simmer for 30 to 45 minutes until the green beans are tender.
  • Stir in the reserved crispy bacon bits and check seasoning, adding more salt and pepper if necessary.

Notes

Use fresh green beans for the best flavor. Don't rush the simmering process! You can add red pepper flakes for a little kick.
