  • Cook the chopped bacon in a large pot over medium heat until crispy, leaving the fat in the pot.
  • Remove the bacon and let it drain on a paper towel.
  • Sauté the chopped onion and minced garlic in the bacon fat until the onion is translucent.
  • Add the fresh green beans to the pot and stir to combine with the onion and garlic.
  • Pour in enough water or broth to cover the green beans.
  • Season with salt and pepper, adjusting to taste.
  • Bring the mixture to a gentle boil.
  • Reduce heat, cover the pot, and let the beans simmer for 1 to 1.5 hours, stirring occasionally.
  • Check the beans for tenderness; they should be bright green and tender to the bite.
  • Stir in the crispy bacon before serving.
  • Serve warm.

Notes

You can add fresh herbs like rosemary or thyme for extra flavor. A splash of vinegar or lemon juice adds brightness before serving.
