  • 1 pound Sausage (preferably breakfast sausage)
  • 1/4 cup Flour
  • 2 cups Milk (whole milk is best)
  • 1/2 teaspoon Salt or to taste
  • 1 teaspoon Black Pepper freshly ground, if possible
  • 2 tablespoons Butter for extra richness

Instructions
 

Cooking the Sausage

  • In a large skillet over medium heat, crumble the sausage and cook it until it’s browned and thoroughly cooked, about 5-7 minutes.
  • Carefully drain about half of the grease, leaving about 2 tablespoons in the skillet.
  • Add 2 tablespoons of butter to the skillet and let it melt into the sausage drippings.

Making the Gravy

  • Gradually sprinkle the flour over the sausage and drippings, stirring well. Cook for about 2 minutes.
  • Slowly pour in the milk, whisking constantly until the mixture begins to thicken, about 5-10 minutes.
  • Add salt and freshly ground black pepper, tasting and adjusting seasoning as needed.
  • Let the gravy simmer until it reaches your desired consistency, adding a splash more milk if too thick.
  • Remove from heat and serve hot over warm biscuits.

Notes

For an even richer flavor, consider using a combination of pork sausage and a hint of smoked sausage. Don’t skimp on the seasoning, and if you like heat, add a pinch of cayenne or hot sauce.
