Wet Ingredients

  • 1 cup buttermilk Adds moisture; can substitute with vinegar/lemon juice in milk.
  • 0.5 cups vegetable oil Keeps the cake moist.
  • 3 large eggs Bind the ingredients together.
  • 1 teaspoon vanilla extract Adds sweet aroma.

Frosting Ingredients

  • 5 ounces cream cheese Key component for frosting, adds richness.
  • 0.5 cups powdered sugar Sweetens and stabilizes the frosting.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and cloves. Whisk together well.
  • In a separate bowl, whisk together the wet ingredients: buttermilk, vegetable oil, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  • Divide the batter evenly between the prepared cake pans and smooth the tops.

Baking

  • Place the pans in the oven and bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto wire racks to cool completely.

Frosting

  • Beat the cream cheese in a medium bowl until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
  • Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides.

Serving

  • Cut a generous slice of Spice Cake and enjoy the delightful aromas.

Notes

For extra crunch, consider adding chopped walnuts or pecans to the batter. Store leftover cake in an airtight container for freshness.
