Ingredients
  

For the Chicken

  • 1 lb chicken thighs or breasts, cut into bite-sized pieces Preferably thighs for juiciness.
  • 1 tbsp olive oil For sautéing.

For the Sauce

  • 1 medium onion, finely chopped Adds depth and sweetness.
  • 3 cloves garlic, minced Brings warmth and aroma.
  • 1 tbsp ginger, minced Adds a kick of freshness.
  • 1 tbsp curry powder For warmth and flavor.
  • 1 tsp ground cumin Offers nutty, earthy taste.
  • 1 tsp paprika Adds smokiness.
  • 1 tsp turmeric Brightens the dish.
  • 1 can (14 oz) coconut milk Brings creaminess.
  • 1 tbsp soy sauce Adds umami flavor.
  • 2 tbsp fish sauce (optional) Deepens flavor if used.
  • 1 tbsp brown sugar Balances spices.
  • 1 cup fresh basil leaves, roughly chopped Adds brightness.
  • to taste Salt and pepper For seasoning.

For Serving

  • 2 cups cooked jasmine rice or basmati rice To serve the chicken over.
  • 1 fresh lime wedges For garnish.

Instructions
 

Preparation

  • Heat olive oil over medium heat in a large skillet. Once the oil is shimmering, add the chicken pieces and cook until browned, about 5 to 7 minutes. Remove the chicken from the pan and set aside.
  • In the same pan, add the onion, garlic, and ginger. Cook for about 3 to 4 minutes until softened and fragrant.
  • Add the curry powder, cumin, paprika, and turmeric. Stir for about a minute to toast the spices.

Cooking

  • Pour in the coconut milk and soy sauce, and if desired, the fish sauce. Add the brown sugar and stir well. Return the chicken to the pan.
  • Bring to a gentle simmer, reduce heat to low, cover, and cook for about 15 to 20 minutes.
  • After simmering, stir in the fresh basil and cook for an additional couple of minutes. Season with salt and pepper to taste.

Serving

  • Serve the Spiced Coconut Basil Chicken over jasmine or basmati rice and garnish with fresh lime wedges.

Notes

Great for family nights and easily made vegetarian with tofu or chickpeas. Store leftovers in an airtight container; flavors deepen overnight.
