  • 1 lb chicken feet, cleaned and nails trimmed
  • 1 tbsp cooking oil For frying
  • 3 cloves garlic, minced Adds aroma
  • 1 inch piece of ginger, minced Adds a hint of spice
  • 2 tbsp soy sauce For flavor
  • 1 tbsp oyster sauce Enhances flavor
  • 1 tbsp Shaoxing wine For depth of flavor
  • 1 tbsp honey or maltose For sweetness
  • 1 cup water For cooking
  • 2-3 red chilies Adjust based on spice preference
  • Green onions for garnish

Preparation

  • Blanch the chicken feet: Boil a pot of water and add the chicken feet. Boil for 5-7 minutes, then drain and rinse with cold water.
  • Deep fry (optional): Heat oil in a wok or deep fryer to 350°F. Fry the blanched chicken feet for 2-3 minutes until golden brown. Drain and set aside.

Cooking

  • In a wok or pan, heat oil over medium heat. Add garlic and ginger, and sauté until fragrant.
  • Add soy sauce, oyster sauce, Shaoxing wine, honey, and water to the pan. Stir to combine.
  • Add the chicken feet and chilies to the pan. Bring to a simmer, cover, and cook for 30-40 minutes until the chicken feet are tender and the sauce has thickened.
  • Garnish with green onions and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a pan on low heat or in the microwave before serving. Make sure chicken feet are cleaned and nails trimmed properly for the best texture. Adjust the number of chilies based on your spice preference.
