  • 1 lb spicy breakfast sausage (uncooked)
  • 1 cup shredded cheddar cheese
  • 8 oz cream cheese, softened
  • 1 can Rotel (drained well) 10 oz size
  • 1 1/4 cups Bisquick baking mix

For Garnish

  • Chopped parsley for garnish
  • Extra cheese for topping (optional)

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the sausage, cheddar cheese, cream cheese, drained Rotel, and Bisquick. Stir until everything is fully combined.
  • Roll the mixture into 1.5-inch balls and place them on the prepared baking sheet.

Baking

  • Bake in the oven for 20–25 minutes or until they are golden brown and cooked through.
  • If you like, top with more melted cheese and a sprinkle of parsley before serving warm.

Notes

These sausage balls can be served hot or warm. Great on their own or with your favorite dipping sauces such as ranch dressing or barbecue sauce. For storage, let them cool, place in an airtight container, and refrigerate for up to 3 days. They can also be frozen for up to 3 months.
