Ingredients
  

Mango and Seasoning

  • 4 large firm mangoes, sliced Choose mangoes that are not too ripe so they can hold their shape.
  • 4 none dried red chilies These will give your mango that lovely heat.
  • 2 tablespoons black peppercorns They add a warm, aromatic flavor to the pickle.
  • 2 tablespoons mustard seeds These seeds bring a tangy crunch.
  • 1 tablespoon coriander seeds They lend a citrusy note that brightens the dish.
  • 4 cloves garlic, sliced A must-have for aromatic depth.

Brine

  • 2 cups white vinegar Essential for the pickling process.
  • 1 cup water To help dilute the vinegar.
  • 3 tablespoons salt For flavor and preservation.
  • 2 tablespoons sugar Adds subtle sweetness to counter the heat.
  • 1 tablespoon turmeric powder For color and extra flavor.

Instructions
 

Preparation

  • Wash the mangoes thoroughly and dry them well. Slice them into thick wedges.
  • Sterilize your jars by washing them in hot soapy water or run them through a hot cycle in your dishwasher.
  • In a dry pan over medium heat, lightly toast the black peppercorns, mustard seeds, and coriander seeds for a couple of minutes until fragrant.
  • Cool the toasted spices and mix them with the sliced garlic and dried chilies.
  • In a saucepan, combine white vinegar, water, salt, and sugar. Bring this mixture to a boil, and stir in the turmeric powder until dissolved. Let it cool to room temperature.

Assembling

  • Layer mango slices and the spice mixture in sterilized jars.
  • Pour the cooled brine over the mango slices until completely submerged. Seal the jars tightly.

Storage

  • Place sealed jars in the refrigerator for a couple of days for flavors to mingle.

Notes

Make sure not to rush the cooling process of your brine. Options to add more heat include increasing the number of dried red chilies. Use firm mangoes for the best result.
