Ingredients
  

For the Shrimp

  • 1 lb shrimp, peeled and deveined Plump and juicy, just waiting to soak up all those delicious flavors.
  • 2 tbsp olive oil Adds richness and helps the spices adhere to the shrimp.
  • 1 tbsp lime juice Enhances all the flavors.
  • 1-2 tsp chili powder Adjust to your taste.
  • 1/2 tsp smoked paprika Adds depth and smokiness.
  • 1/2 tsp cumin Essential for warm, earthy flavor.
  • 1 clove garlic, minced Infuses the dish with great aroma and taste.
  • Salt & pepper to taste Essential seasonings.

For the Rice

  • 1 cup jasmine or basmati rice Fluffy base to soak up juices.
  • 1.5 cups water or chicken broth Using broth enhances rice flavor.
  • 1 tbsp lime juice Adds extra zest.
  • 1/4 cup fresh cilantro, chopped Adds burst of flavor.

For the Corn Salsa

  • 1 cup corn kernels (fresh, frozen, or canned) Sweet crunch.
  • 1/2 cup cherry tomatoes, diced Juicy fresh element.
  • 1/4 cup red onion, finely diced Zesty crunch.
  • Salt and pepper to taste Essential for flavor.

For Assembly

  • 1 cup black beans, rinsed and drained Adds protein and heartiness.
  • 1 medium avocado, sliced Finishes the bowl beautifully.
  • 1/4 cup shredded cheese (optional) Delicious cheesy addition.

For the Chipotle Mayo

  • 1/4 cup mayonnaise Base for our creamy dressing.
  • 1 tbsp chipotle sauce (or 1 chipotle pepper in adobo, minced) Adds smoky, spicy flavor.
  • 1 tsp lime juice Final touch for flavor.

Instructions
 

Marinate the Shrimp

  • In a large bowl, combine olive oil, lime juice, chili powder, smoked paprika, cumin, garlic, salt, and pepper. Mix well until combined.
  • Add the shrimp, tossing gently to coat thoroughly. Cover and let marinate for about 15-20 minutes.

Cook the Rice

  • In a medium pot, combine rice and water or chicken broth. Bring to a boil over medium heat.
  • Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until tender. Fluff with a fork and mix in lime juice, cilantro, and salt.

Prepare the Corn Salsa

  • In another bowl, combine corn, cherry tomatoes, red onion, lime juice, cilantro, and salt and pepper. Stir gently and set aside.

Cook the Shrimp

  • Heat a skillet over medium heat. Cook the marinated shrimp for 2-3 minutes per side until pink and opaque.

Make the Chipotle Mayo

  • In a small bowl, mix mayonnaise, chipotle sauce, and lime juice until smooth.

Assemble the Burrito Bowl

  • In bowls, layer cilantro-lime rice, black beans, corn salsa, cooked shrimp, and sliced avocado.
  • Drizzle with chipotle mayo and sprinkle with shredded cheese if using.

Serve and Enjoy

  • Garnish with extra cilantro and lime wedges if desired.

Notes

Feel free to swap shrimp for chicken or sautéed vegetables for a vegetarian option. If you like your rice extra fluffy, rinse it in cold water before cooking.
